Perfectly crisped on the outside, and soft and chewy on the inside. A real family treat!
Ingredients
- 1 banana (mashed, or unsweetened applesauce.)
- 1/4 cup molasses
- 2 1/2 cups light brown sugar (packed)
- 1 cup vegetable oil
- 2 eggs
- 4 1/2 cups all-purpose flour
- 2 tablespoons ground ginger
- 1 tablespoon baking soda
- 2 teaspoons ground cinnamon
- 1 teaspoon ground nutmeg
- 1/2 teaspoon salt
Directions
Preheat oven to 350 degrees. Combine banana (or applesauce), molasses, brown sugar, oil, and eggs in a large mixing bowl. Beat until well combined. Add dry ingredients, beating again until well combined. | |
Drop by heaping tablespoonful onto a large, ungreased baking sheet. Bake for approximately 10 minutes, until the tops of the cookies are well crackled and just slightly browned. Remove from oven and let cool. Makes about 34 cookies. |
These sound yummy! So there is no molasses in them?

Umm the cookies are called "soft ginger MOLASSES chews", where does the molasses come in?? Did I miss reading it?

We made these - and they are delicious - despite my misreading the recipe and putting in 2 TABLESPOONS of cinnamon, instead of 2 tsp, and using dark brown sugar instead of light (cause that's what was in the pantry!)Even with these slight tweaks (!) they are yummy!!!
