Summer calls for light dinners and Fish Fajitas really fit the bill. Not a fan of fish? You can always substitute chicken, or any meat you prefer.
Ingredients
- 3 tablespoons olive oil
- 1 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1 1/2lb halibut or other firm white fish (cut into bite-sized chunks)
- 1 small onion (peeled, halved, and sliced)
- 2 red and/or yellow peppers (cored, seeded, quartered, and sliced)
Directions
Prepare onions and peppers and set aside. | |
Whisk together olive oil, cumin, salt and pepper in a medium-sized bowl. Add halibut and stir. | |
Heat a large frying pan over high heat until very hot. Add halibut and marinade mixture. Add onions and peppers and fry until fish is just cooked and veggies still have some crunch. Don't overcook. Serve with warm corn tortillas, guacamole, and chopped fresh cilantro. |

I was planning on making something similar tonight - fish tacos. I'm using cod and then I marinate some chopped cucumbers in vinegar and some iceberg lettuce in lemon juice, add guac and salsa. Good times.

Yum! We did this very same thing when we visited Florida this past winter. We had gone out on a gulf fishing expedition and came home with a lot of fish. We looked in my daughter's fridge and saw peppers-onions-and guacamole. A perfect trifecta combine to make a yummy meal.

These are a staple here in Texas. We've called them Fish Tacos for years. We even have a shrimp one that will knock your socks off!
