Looking for an impromptu treat when friends drop in? My Gingerbread Eggnog Ice-Cream sandwiches are just the ticket!
Start with some thin store-bought gingerbread cookies
and some slightly softened eggnog ice-cream.
Dollop ice-cream onto bottom cookie and spread around, to cover.
Press down top cookie atop ice-cream. Smooth around edges and place in the freezer to harden.
Serve when hardened or wrap individually, with plastic wrap and serve as needed. The cookies will soften just like a traditional ice-cream sandwich if stored in the freezer overnight.
The combination of gingerbread and eggnog is delicious, but any flavor of your choosing would work wonderfully. It's your treat, so you decide!

They look cute, but brrrrrrr...
My boys tease me about ice cream in cold weather... if they ask for ice cream, on any day that isn't blazing hot and sunny, I always say: "It's too cold for eating ice-cream." And they have to remind me, yet again: "Mom, real ice cream lovers don't care what the weather is!" It would be funny to bring these out to surprise them with... especially with the *frosty* theme!

Ooh! I'm imagining these with our homemade pepparkakor. (Swedish spice cookies have a stronger flavor and are usually crisper than American gingerbread.) Yummy.

Serena. I just tried these today after reading this yesterday. Can I just say, I AM IN LOOOOVE?? This flavor combo was so unexpectedly delicious that I seriously cannot believe it! I picked up some Anna's Ginger Thins at the store(only real gingerbread thin cookies I could find) and the Egg Nogg ice cream was in the freezer section, already slightly sofented. I made them and put 'em in the freezer and I have had several. *blush*. SO GOOD. Thank you for this recipe! I'm sharing them with my loved ones tonight!
